| FRENCH ONION SOUP |
- Onion, 1/2 thinly sliced
- Butter, 1 tbsp
- White wine, 1/2 cup
- Garlic, 3 cloves diced
- Beef stock, 1 litre
- Gruyere cheese, 1/2 cup grated
- French stick, sliced
- Bay leaf, Black peppercorns, Thyme, Salt, Pepper - to taste
Melt the butter and add the onions. Cook over medium heat, stirring to achieve a uniform golden colour until the onions are soft. Add the garlic and wine
and bring to a boil. Add the stock and spices and simmer for half an hour. Adjust seasonings to taste. Pour soup into small bowls, top with french stick,
and grated Gruyere. Place under the broiler until cheese browns and bubbles.
