ENTOMATADAS
An entomatadas may not be the healthiest selection around but it sure does taste good. Picture a cannelloni made with a deep-fried corn tortilla and you'll have a pretty good idea what you're about to make. As with almost all Mexican foods what you put in them is entirely up to you and the limits of your imagination. Any meat, fish, or shellfish will go very well, and why not top it off with a great salsa or spicy sauce? Later this summer we'll get to many of the great sauces, but for now you can buy one at a supermarket or do a few searches at FoodTV.com for hot pepper sauces.

  • Corn Tortillas, 4
  • Olive Oil, 1/4 cup
  • Onion, 1
  • Tomatoes, 1 cup diced (preferably roma)
  • Fresh Parsley or Cilantro, 1/4 cup minced
Preheat your oven to 300 degrees F. Heat the olive oil in a skillet over medium heat until it is quite hot. Dip each tortilla in the oil and cook for only 10 to 15 seconds on each side until they are softened. Drain on paper towels. Place your desired stuffing along one edge of the tortilla and roll it as though rolling up a rug. Place the entomatadas seam side down in a baking dish, top with your desired sauce, and place in the oven for 10 minutes. Garnish with additional parsley or cilantro and serve.

Makes 4 entomatadas.
