QUESADILLAS
Quesadillas are the simplest, and thus most common, form of Mexican food available. They can now be found easily in anything from Taco Bell to The Angry Tomato here in town and with good cause - they can taste so good. The beauty of a quesadilla is, like a pizza, you're limited by only your imagination. What you put in them is entirely up to you and the complementary flavours you can assemble. Preparation offers three distinct options as well - they can be baked on a pizza stone in the oven, fried on a flattop or pan, or even barbecued or grilled. Here are the basics and a few of our filling suggestions - just remember, a simple base with items at each end of the flavour spectrum will always work best.

    The Base Quesadilla
  • Flour Tortillas
    The Mesa
  • Crumbled Blue Cheese, Caramelized Onions, Fresh Cilantro, Grilled Chicken
    Ham'n'Cheese
  • Serrano Ham or Prosciutto, Monterey Jack cheese, Serrano or Jalapeno Pepper
First decide if you'll be having a small or large - a small is simply one flour tortilla folded in half, while a large is two flour tortillas as the bread in a sandwich. Place the ingredients you've selected evenly over the surface and close the quesadilla. If you plan to bake or grill you may wish to brush the surface with olive oil and cook until the cheese is melted. In a frying pan melt a small amount of butter until it begins to boil, then cook the quesadilla until the cheese melts.
